Quick and Easy Pizza Cupcakes
Ingredients
- 250g Beef with King Island Cheddar & Caramelised Onions Sausages
- 1 Tbsp Olive Oil
- 200g Plain Flour
- 1 Tsp Salt
- 120ml Warm Water
- 7g Dry Yeast Sachet (or 1 heaped tsp)
- 1 Tsp Sugar
- 1/4 Cup Pizza Sauce
- 1 Cup Mozarella Cheese
- 1 Tbsp Oregano
- 3 or 4 Mini Capsicums
- 1/4 Cup Sundried Tomatoes
Method
- Step1 Combine the flour and salt in a large bowl. In a separate small bowl add the warm water, yeast & sugar, set aside for 5-10 mins. Add the yeast mixture into the flour and mix to form a soft, sticky dough. If it is too sticky add a little bit of extra flour. Then, take the dough and put onto a lightly floured surface. Knead for 8 to 10 minutes or until dough springs back when touched. Put the dough back in the bowl, cover with a thick cloth and leave in a warm area until it rises, about 30-60 minutes.
- Step2 Heat 1 tablespoon olive oil in a frying pan. Add the sausages to the pan and cook over medium heat for 5 minutes, or until nicely browned. Once ready, remove sausages from pan and set aside. You can then cut your sausages into bite sized pieces.
- Step3 Preheat oven to 180c fan-forced. Grease a 12 hole cupcake pan3
- Step4 While the dough is proving, in a pan add vegetables of choice; we have added sliced capsicum and sundried tomatoes. Mix this together with the sausages adding herbs of choice, ours being oregano and a pinch of salt.
- Step5 Once the dough is ready, roll it out until about 5mm thick. Using a round cutter, cut 12 circles from the dough. Line the cupcake tray with dough circles, pushing into pan to come up outside each hole. Spread pizza sauce on the bottom of sides of the pizza bases. Sprinkle with a little of the mozzarella. Top each pizza base with the mixture from your pan. Sprinkle with remaining cheese, and any additional herbs. Bake for 20 minutes or until bases are golden and cheese is melted. Stand in pan for 5-10 minutes and serve. Enjoy!
