Gourmet Sausage & Egg Breakfast
Ingredients
- x2 The Gourmet Sausage Company sausages (any of your choice)
- 1 or 2 Eggs
- x2 Slices of Sourdough Bread
- x1 Avocado
- 2 or 3 Cherry Tomatoes
- 1 pinch of Salt and Pepper
- 1 tsp of Olive Oil
- 1 Tsp of chopped Chives
Method
- Step1 Heat olive oil in a frying pan and cook sausages until cooked through, remove to the side.
- Step2 In the same pan, place the cherry tomatoes face down and fry off for a few minutes, remove to the side.
- Step3 The fun part: egg poaching. Unless you’re a seasoned pro, forget swirling hot water and vinegar. We purchased Egg Poaching Bags from our local grocery store and in 4 minutes flat the eggs were perfectly poached! Crack 1 egg into the poachie bag, dip the bag into a pot of slowly simmering hot water for 4 minutes, remove the poachie from the water and place it onto a plate with paper towels to soak up the excess water. Take egg out of the poachie and voila!
- Step4 Toast your sourdough bread in either a toaster or oven grill. However you prefer!
- Step5 Smash 1 avocado and spread onto your toasted bread. Place the poached egg, tomatoes and sausages on the bread and garnish with salt, pepper and chives. Enjoy!
