Country Style Beef Sausage Kale & Mushroom Pot Pie
Ingredients
- 250g Country Style Beef Sausages
- 1/3 Cup Extra Virgin Olive Oil
- 1 Onion Finely Chopped
- 2 Cloves Garlic (crushed)
- 1 Cup Sliced Mushrooms
- 2 Cups Chopped Kale
- 2 Tbsp. Tomato Paste
- 1 Tsp. each of Ground Cumin, Ground Coriander & Fennel Seeds
- 2 Tsp. Smoked Paprika
- 400g Can Chopped Tomatoes
- 2 Cups Beef Stock
- 2 Sheets Frozen Puff Pastry
- 1 Egg Lightly Beaten
Method
- Step1 Heat the oil in a large saucepan, fry sausages until cooked through, remove from the heat and chop into bite sized pieces.
- Step2 Return the pan to the heat and add onion and garlic, sauté until tender, add the mushroom and kale and cook until tender.
- Step3 Return the sausages to the pan and add the spices, chopped tomatoes, and beef stock and simmer for approximately 10 minutes until the sauce thickens.
- Step4 Divide between serving dishes. Pre-heat the oven to 180 degrees. Cut circles of puff pastry large enough to cover the serving dishes and place on top. Brush pastry with egg wash and place on a baking tray and into the oven.
- Step5 Bake for approximately 15 minutes until pastry is puffed and golden brown. Serve hot. Enjoy!
