Country Style Beef Sausage Kale & Mushroom Pot Pie

  • 250g Country Style Beef Sausages
  • 1/3 Cup Extra Virgin Olive Oil
  • 1 Onion Finely Chopped
  • 2 Cloves Garlic (crushed)
  • 1 Cup Sliced Mushrooms
  • 2 Cups Chopped Kale
  • 2 Tbsp. Tomato Paste
  • 1 Tsp. each of Ground Cumin, Ground Coriander & Fennel Seeds
  • 2 Tsp. Smoked Paprika
  • 400g Can Chopped Tomatoes
  • 2 Cups Beef Stock
  • 2 Sheets Frozen Puff Pastry
  • 1 Egg Lightly Beaten
  • Step1 Heat the oil in a large saucepan, fry sausages until cooked through, remove from the heat and chop into bite sized pieces.
  • Step2 Return the pan to the heat and add onion and garlic, saut√© until tender, add the mushroom and kale and cook until tender.
  • Step3 Return the sausages to the pan and add the spices, chopped tomatoes, and beef stock and simmer for approximately 10 minutes until the sauce thickens.
  • Step4 Divide between serving dishes. Pre-heat the oven to 180 degrees. Cut circles of puff pastry large enough to cover the serving dishes and place on top. Brush pastry with egg wash and place on a baking tray and into the oven.
  • Step5 Bake for approximately 15 minutes until pastry is puffed and golden brown. Serve hot. Enjoy!
