Chicken Sage & Roasted Onion Tacos

Ingredients
  • 250g Chicken Sage & Roasted Onion Sausage
  • 6 Soft or Hard Taco Shells
  • 200g Mozzarella
  • 3 Large Tomatoes
  • 1 Red Onion
  • 1 Gem Lettuce (shredded)
  • 1 Bunch Fresh Coriander
  • 200g Sour Cream
  • 1 Avocado
  • Juice of ½ Lemon
  • Sea Salt Flakes
  • 2 Tbsp. Olive Oil
  • 1 Jalepeno (thinly sliced)
  • 1 Lime (cut in quarters)
Method
  • Step1 Pre-heat the oven to 180 degrees and place the hard taco shells on a baking tray.
  • Step2 To make the guacamole half and seed the avocado, scoop the flesh into a bowl and mash with a fork, add lemon juice and a pinch of sea salt flakes and mix to combine, place in the fridge until needed for serving.
  • Step3 To make the salsa, cut two tomatoes into quarters, remove the seeds and finally dice, place in a bowl. Finally dice half the red onion and add to the bowl. Add the olive oil and a good pinch of sea salt flakes and stir to combine, place in the fridge until needed for serving.
  • Step4 Place olive oil in a frying pan and cook sausages until cooked through.
  • Step5 Heat taco shells for approximately 5 minutes and then assemble. Enjoy!
