Chicken, Feta, Pistachio & Rocket Sausage Health Bowl
Ingredients
- 250g Chicken, Feta, Pistachio & Rocket sausage
- 2 Tbsp. Extra Virgin Olive Oil
- 1 Cup Cooked Brown Rice and Quinoa
- 1 Avocado (sliced)
- 1 Thinly Sliced Cucumber
- 2 Cup Mixed Salad Leaves
- 250g. Hummus (or favourite dip)
- 1 Cup Black Olives
- 1 Punnet Cherry Tomatoes (halved)
- 1 Cup Baby Bocconcini
- 4 Tortillas (cut in 1/8)
Method
- Step1 Heat olive oil in a frying pan and cook sausages until cooked through, remove from the heat and slice once cooled slightly.
- Step2 Place cut tortillas on a baking tray and place in the oven under the grill until crispy.
- Step3 Assemble health in a large shallow sided bowl with all ingredients. So simple and delicious! Enjoy!
