Chicken, Feta, Pistachio & Rocket Sausage Health Bowl

  • 250g Chicken, Feta, Pistachio & Rocket sausage
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Cup Cooked Brown Rice and Quinoa
  • 1 Avocado (sliced)
  • 1 Thinly Sliced Cucumber
  • 2 Cup Mixed Salad Leaves
  • 250g. Hummus (or favourite dip)
  • 1 Cup Black Olives
  • 1 Punnet Cherry Tomatoes (halved)
  • 1 Cup Baby Bocconcini
  • 4 Tortillas (cut in 1/8)
  • Step1 Heat olive oil in a frying pan and cook sausages until cooked through, remove from the heat and slice once cooled slightly.
  • Step2 Place cut tortillas on a baking tray and place in the oven under the grill until crispy.
  • Step3 Assemble health in a large shallow sided bowl with all ingredients. So simple and delicious! Enjoy!
